Chocolate Coconut Macaroons


These Chocolate Coconut Macaroons are so delicious, even though I am absolutely NOT a big fan of coconut, AT ALL! Anyway, to get down to the point...these cookies are so good. Why? Well, the fact that they take barely any time to make, are unbaked, are a ball of chocolatey goodness and lots more, why, I wonder why they'd be so good.

                                                                                   Chocolate Coconut Macaroons

2 cups of coconut, shredded (+ 2 more for later)
1 cup of cocoa powder
2/3 cup of honey
2 T. of coconut oil
1/4 t. Salt

Mix everything together. Pour the extra two cups of shredded coconut into a bowl. Roll mixture together into balls, then roll into the coconut, till well coated. Place onto baking sheets, then place into refrigerator for 20-30 minutes. Take out and serve. Enjoy!

Mix together everything

Pour about 1 cup of leftover shredded coconut into a bowl.

Scoop balls from "dough" and then roll into the coconut.

Put the balls onto a cookie sheet.

Stick your cookie sheet into your fridge for about 20-30 minutes
